Healthy Zucchini Bread
This healthy zucchini bread is gluten free, paleo, refined sugar free, and oil free!
- 1 medium zucchini, shredded (1 heaping cup)
- 2 eggs
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp baking soda
- pinch of salt
- 1/2 cup chopped dark chocolate
Heat oven to 350.
Line 8x4 loaf pan with parchment paper.
In a mixing bowl, combine wet ingredients until well combined.
Then add in dry ingredients and mix until combined. Fold in chocolate.
Pour into pan and top with more chocolate.
Bake for 30-45 minutes or until toothpick comes out clean.
Let cool completely before serving. Enjoy!
